Schulman asks what a food protection certificate is and how to qualify
Schulman asks about Intro 1124's food protection certificate renewal and notes her chief of staff, a certified chef, suggested the idea. Schiff says every restaurant must have a supervisor with an FPC on site, the course is offered at the Health Academy and by authorized providers, and passing the exam earns a wallet-sized card.
What is, now I'm going to switch back, what I'm going to talk about my intro 1124, the food protection certificate renewal.
That's an easy one.
What is a food protection certificate and how does an individual qualify for one?
And I want to just state for the record that
My chief of staff has a certificate.
He's a certified chef.
And he came up with the idea of doing this because he felt that you need to know what's going on in the industry and all of that moving forward.
And it's good to do something like this.
Other jurisdictions have it.
But anyway, go ahead.
Well, that's great.
Thank you.
So you...
As I noted in my testimony, every restaurant is required to have a supervisor on site with a food protection certificate.
And it's really the most important requirement that we have, and that's sort of intuitive, I think, that somebody trained in food protection supervising the operations in the restaurant would be critically important.
We offer the course at our health academy.
I don't know if you're, you can also take it from authorized third-party providers.
So I don't know if your chief of staff took our course at the Health Academy on the Upper West Side.
It's a long time.
Okay, well, we've been offering it for a long time.
It's a great class.
I encourage everyone to take it, even for your own home cooking.
You may never, you know, you won't cook the same way again.
Know what temperature to cook my chicken to last night.
So at the end of that course, there is an exam.
And if you pass the exam, you get a card.
It's a wallet-sized card, so easy to carry around.
Keep it in your wallet.
You'll have it with you.
Please describe the material covered in the food protection course and what the final examination entails.
So the course really covers, if you take it in person, it's every morning for four days, and then the fifth day it's a review session and exam.
So it really covers all of the issues that are in our food safety rules and how to make sure that you are preparing, storing,
serving food in ways that meets food safety protections to keep your diners safe.
Approximately how many people take the food protection course each year?
It's about 35,000 every year.
Oh, wow.
Yeah.
